In the Cooking Mode

Today is a lazy day for me. Why? Because it's been raining like crazy for the whole day. I didn't get the chance of walking Pumpkin outside and I feel so sorry for her. I hope the weather is okay so we can walk early in the morning at the park. I did a lot of cooking today. I made Filipino foods for lunch, dinner and for our brunch tomorrow. My son loves the meal I prepare for dinner. It was a garlic spinach, eggplant with garlic and oyster sauce; and fried tofu with lime juice, onions and soy sauce for protein. He did eat rice with all of it. Anyway, below is a pork adobo with new potatoes for brunch tomorrow.


This dish happened to be the Philippine's National dish; it is easy to make and really delicious especially if you eat it with steamed rice and some veggies of your choice. On the other hand, I can't eat it with rie for I am diabetic. So, I eat it with few cubes of potatoes instead. Anyway, if you haven't tried it, you should. "cause if you don't....you are missing a lot!

Camping in Cooper Lake State Park

After church last Sunday, went home right away, ate lunch, and packed our camping stuffs up and headed to Cooper Lake State Park in Sulphur Spring. We got there before 6pm. Though the weather was a little bit warm, we set up our tent right away, ate diner and then went for a walk with our new dog, Pumpkin. It was fun because Jacob saw an armadillo for the first time while we were walking. Thank goodness, at around 10, it started to cool of and we were able to comfortably lay on our bed inside the tent. It took a good solid hour before we all finally fell asleep for the bugs were very noisy.


Anyway, above are few of the pictures I have taken during our two day camp there. We were supposed to stay there for another night, but the transplant center phoned us saying that I need to go to the hospital to have my cbc test done. Oh well, it is really hard to schedule a perfect time for a family camp. Hope next time we wouldn't encounter anything like that again.

These are the cards my son's made for me for Mother's Day. What a sweet boy I have! The messages where very touching and I love them. I never thought how much he appreciates every little thing I do for him....and how much they meant to him.


These cards will be kept in a safe place where I can always read and remember how much he loves me...and how much he values the love I give to him...even the small and simple gestures of hugs, kisses and tickling :-). He is growing like a weed and before I know it, he is already a teenager.

Damage from Hailstorm

These are the photos of the damage the hailstorm made on our van four weeks ago when tornado touched the Dallas - Forth Worth areas. We parked our car at Park 'n Fly near the airport the 30th of March when we flew to Utah for our church's semi - annual General conference. We've found out about the tornado that hit Forney area through our family friend who happened to live in the community where we live. Our house was unharmed, but the van.

Anyway, we are so glad we have insurance company who helped fix the window. Now, it is good as it was, plus we got money ($3,000) from them to fix the dents. Not bad, hope the money would be enough.

My Little Egg Hunter

In our house one of our family tradition during Easter is to boil, color/decorate and hide the eggs. We don't just buy plastic egg shells and stuff them with toys and candies, instead we do the real egg. Daddy hides the eggs and Jacob's finds them.

Of course I do the boiling of the eggs and helps decorate them. How about you? What's your family Easter tradition? Oh and one more thing, we don't buy Jacob an Easter basket and filled it with toys and chocolate for it deprived the true meaning of Easter. Plus, he couldn't care less even if we buy him one.

In Front of the Manti LDS Temple

During our trip/vacation to Utah three weeks ago, we took a lot of pictures on all the places with visited and that includes this old LDS temple. Manti Temple is one of the few of the LDs operating temple in the world. This temple is still beautiful though it is old. While there, we saw tons of LDS people went to do temple works for the living and also for the dead. It always amazes me how the work of the Lord goes forth despite trials and tribulations.

I an glad we are part of HIS marvelous works and wonders. With me is my adorable son who enjoys every visit he had on the temple.

When There is No School

It is very seldom that we are together as family during school days or weekdays. So, when the opportunity comes, we don't take it for granted. We grab it with our hands and have fun with it. This Monday, there was no school due to the Staff or teacher's training. Hubby, son and I went to the Dallas World Aquarium in the morning, and then went to the harbor place for a dinner at the an Italian Resto where we had pizza and craw claws, so yummy, followed by a short trip to the neighboring park. We all have so much fun that day.

Movie Time with Friends

The other day, my friends (Lyn and Emely) and I watched movie for the first time. We've watched the movie entitled "The Vow" starred by Rachel McAdams and Channing Tatum. It was a good movie; a love story that is very touching. Would you believe that it is based on a true story? I fell in love again after watching it. My friends were crying while watching this movie. Yes, it was a tear jerking movie. Watch it if you like love story.


I love Rachel McAdams for she is not only pretty, but very talented gal. I fell in love with her when I saw her first movie which was the "The Notebook" with Ryan Gosling. Both of these actors are Canadian who are based in the US. I also love the movie she made "The Stone Family." That movie was hilarious. You will laugh so hard every time you see it!

The New Look of Our Living Room

Couple of months ago, hubby and I decided to finally paint our living room with a shade of adobe. We went to a home improvement store and bought two gallons of paint. The paint was quite expensive but it is worth the price because we both love the outcome of the finished product. It took two days for us to paint the living room area; and now it looks great! We love our newly painted living room. Oh, and by the way, we also rearranged the furniture, thus making it looks better than before it was painted. Below are the photos of our new living room.
